Good luck with your project. There is a slew of information out there and some abandonded projects that have application level filtering. ITShield was a good product but it was not fully open source it has since been abandonded. it had  a ton of proxies and patterns built in. I agree with your assesment on the sidewinder. Good product by secure computing but bad part is it has been swalloed up by one of the largest and worthless AV companies out there. Check out Comixwall it looks like a decent firewall with layer 7 filtering. I am curious on how you would use the apache modules to filter ssl traffic.
